• 6 large yellow onions, peeled and thinly sliced
  • olive oil
  • 2 cloves garlic, chopped
  • 4 cups beef stock
  • 1/2 cup cooking sherry
  • 1 bay leaf
  • 1/4 teaspoon of dried thyme
  • salt and pepper to taste
  • french bread
  • provolone or Swiss cheese slices
  • chopped parsley for topping

My Recipe Of The Day:  Quick and easy pressure cooker  French Onion Soup

 

Directions:

1. Heat olive oil in the pressure cooker over medium high heat

2. Add your sliced onions and chopped garlic to the olive oil, and cook for 5 minutes

3. Add Thyme, sherry, bay leaf, and 2 cups of stock

4. Cover and bring your pressure cooker up to high pressure using high heat, lower the heat to stabilize the pressure, and cook for 6 minutes

5. Remove from heat, and let the pressure out by using the quick release method, unlock and remove lid

6. Preheat your broiler to high, and add the remaining cups of stock into the pressure cooker and bring to a boil.

7. Season with salt and pepper

8. Ladle the soup into your oven proof bowls, and top with french bread, then top with your cheese

9. Place soup bowls on baking sheet, and place under the broiler until the cheese is nice and bubbly, about 1-3 minutess depending on your broiler

10. After broiling the soup, top with parsley if desired
