- 1-1/2 cups mayonnaise
- 3 tablespoons lemon juice
- 3/4 teaspoon ground black pepper
- 6 cups chopped, cooked rotisserie chicken meat
- 1 chopped hot pepper (your choice )
- 1/2 red onion chopped
- 3 stalks celery, chopped
- 1 teaspoon mustard ( I use a grainy mustard)
- salt and pepper
- Tomatoes for topping
In a medium bowl, mix together mayonnaise, lemon juice, mustard, salt & pepper. Toss with chicken, peppers, and celery, and red onion. Spread chicken salad on your favorite bread & Enjoy.
