• 1/2 teaspoon ground black pepper
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1/2 large onion, roughly chopped
  • 1 carrot, peeled and roughly chopped
  • 1/2 cup chopped parsley
  • 3 cloves of garlic, roughly chopped
  • 1 pound ground chuck
  • 1 pound ground pork
  • 1 large egg
  • 8 slices of thinly sliced bacon
  • 1 cup grated fresh Parm cheese
  • A few squirts of ketchup
  • 1 cup of bread crumbs or Panko
  1. Preheat the oven to 325 degrees. Line a rimmed baking sheet with heavy-duty foil. Set aside.
  2. Place your bread crumbs, pepper, salt, thyme and cheese in a bowl  and stir around.  Add onion, carrot, parsley and garlic
  3. Place beef and pork in a large bowl, and add crumb mixture, ketchup, and egg. Mix until thoroughly combined. I find that using my hands works best for this. Turn meat out onto the prepared baking sheet and form into a loaf shape, about 5 by 9 inches.
  4.  top decoratively with the bacon slices. Bake for 1 hour, or until a thermometer inserted in the very middle of the loaf registers 155 degrees. If the bacon isn’t quite crisp enough, brown under a broiler for just a minute or two more.


I have been making meatloaf for years, but one day I decided to spruce things up for the Men in my life and add their favorite food to the mix, BACON!!! The Hubby and kids absolutely love this meatloaf! After making this recipe, I was told I was never to make meatloaf again unless it has the bacon on it 🙂  Hope you enjoy too!
